Desserts Recipes - Chocolate Jam Slices Recipe

Ingredients

SERVES 6

  • lOOg/4oz butter (plus extra for greasing)

  • 50g/2oz cooking chocolate (broken into pieces)

  • 2 eggs

  • 175g/6oz granulated sugar

  • 1 teaspoon vanilla essence

  • 225g/8oz plain flour

  • 1/2 teaspoon baking powder

  • Pinch of salt

  • 50g/2oz raspberry jam

  • 75g/3oz desiccated coconut


Method:

  1. Preheat the oven to 180°C/350°F/Gas mark 4. Grease a 20cm/8in square sandwich tin.

  2. Melt together the butter and chocolate in a saucepan over a very low heat, then leave to cool slightly.

  3. Beat the eggs until thick and foamy, then gradually beat in the sugar. Stir in the chocolate mixture and vanilla essence.

  4. Sift the flour, baking powder and salt together, then stir into the egg mixture.

  5. Turn into the sandwich tin and bake for 35 to 40 minutes.

  6. Cool in the tin, spread the jam over the top while still warm and sprinkle with the coconut. When cold, cut into slices.
