175g/6oz cooking chocolate

50g/2oz cream
cheese

25g/1oz butter (softened)

150g/5oz granulated
sugar

2 eggs

1 teaspoon vanilla
essence

100g/4oz plain
flour (sifted)
Method:
-
Preheat the oven to
180°C/350°F/Gas mark 4. Line a 23cm/9in square
baking tin with aluminum foil.

For the crust,
combine the crumbs, almonds, sugar and butter, and
mix well.

Press the mixture evenly into the baking
tin. Bake for 8 minutes, then remove from the oven
and allow to cool completely, leaving the oven on.

For the cheese topping, beat together the cream
cheese, butter, sugar and vanilla essence until
creamy. Add the eggs, milk and flour, and beat until
light and smooth. Set aside.

For the chocolate
filling, melt the chocolate in a heatproof bowl set
over a pan of simmering water, then leave to cool.
Beat together the cream cheese and butter until
smooth.

Gradually beat in the sugar until well
blended. Beat in the eggs, one at a time. Stir in
the vanilla essence, salt and cooled chocolate. Fold
in the flour.

Spread the chocolate filling over the
cooled crust. Pour the cheese topping slowly over
the top of the chocolate filling, spreading evenly.

Bake in the oven for about 50 minutes. Leave to cool
completely before serving, cut into slices.
