225g/8oz butter
(softened)

400g/14oz granulated sugar

2 eggs (well
beaten)

1 teaspoon vanilla
essence

475g/1lb 1oz plain flour

1 teaspoon baking
powder
-
1 teaspoon ground
cinnamon
-
3/4 teaspoon
salt
-
500g/1lb 2oz
baking apples (peeled and chopped)

100g/4oz pecan
nuts
Method:

Preheat the oven to 180°C/350°F/Gas mark 4. Grease a
23cm/9in square baking tin.

In a large mixing bowl, cream the butter, sugar,
eggs and vanilla essence with an electric mixer.
-
Combine the flour, baking powder,
cinnamon and salt, then add to the butter mixture.
Mix until the flour is moistened.
-
Fold in the apples
and pecan nuts. Spread the mixture into the baking
tin and bake in the oven for 45 minutes.
